From Brief to Service-Ready Plans

A structured approach that prioritises cover counts, circulation, and pass adjacency before any aesthetic decisions.

Initial Brief & Discovery

We review your cover targets, service style, staffing model, and any existing floor plans or lease drawings. This session — at our Paris studio or via video call — establishes the operational parameters that will drive every layout decision.

Cover Modelling & Zoning

We model peak covers per service and divide the floor into dining zones: booth perimeter, central freestanding tables, bar adjacency, and pass proximity bands. Table sizes and spacing are calculated from your average party size and turn time.

Layout Development

Draft floor plans showing table positions, booth runs, banquette lines, and pass station placement. A circulation overlay maps runner routes, guest pathways, and bussing corridors. First revision round included in all packages.

Circulation & Corridor Review

Runner and bussing paths are stress-tested against peak-hour movement. Corridor widths, door swings, and back-of-house connections are verified. Cross-traffic between service staff and guests is minimised.

Lighting & Atmosphere

For packages including evening service lighting, we specify fixture types, mounting heights, circuit groupings, and dimming sequences. Table pools, ambient wash, and pass task lighting are layered for dinner service.

Final Deliverables

Scaled floor plans, seating schedule with cover counts, circulation overlays, and (where applicable) lighting fixture schedule. All drawings delivered in PDF and DWG format, ready for your contractor and FF&E team.
