About the Atelier
Design for the Service Floor
Atelier Salle à Manger is a Paris studio focused exclusively on restaurant interior planning. We work with independent restaurateurs, hotel F&B teams, and hospitality groups who need dining rooms that perform under real service conditions.
Our work begins with cover counts, ticket times, and staff movement — not mood boards. We resolve pass-to-table distances, booth seating density, bar queue capacity, and evening lighting before any finish specification is made.
Based at 18 Rue du Faubourg Saint-Honoré, we serve clients across Paris and the wider Île-de-France region.
What We Design
Dining floor layouts with calibrated table spacing and booth clusters. Pass station positioning relative to kitchen output. Bar and waiting zone flow. Service corridor routing for runners and bussing staff. Layered lighting schemes for lunch and evening service.
What We Do Not Do
We do not provide general architectural services, brand identity, or kitchen equipment specification. Our scope is the guest-facing and service-adjacent interior — the room where covers are seated and served.
Our Approach
Cover-First Planning
Every layout starts with your stated covers per service, turn time, and staffing model.
Circulation Testing
Runner routes and guest pathways mapped and stress-tested against peak-hour movement.
Service-Ready Deliverables
Scaled plans, seating schedules, and lighting layouts ready for your contractor and FF&E team.
